vegan chocolate macadamia biscotti

So my husband played around with a recipe for the last couple of weeks… and he finally got it to where we all love the biscotti !

1 and 1/3 cup of brown rice flour flour

1/4 teaspoon of salt

1/2 teaspoon of cinnamon

1/4 to 1/2 teaspoon of baking powder

1/3 cup cup of coconut sugar

mix the above together

1/3 cup of macadamia nuts

1/3 cup of chocolate chips ( or more if you like more chocolate )

put the chocolate and macadamia nuts in food processors to have smaller chunks

1 vegan egg replacement (1 tablespoon of ground flax with 3 tablespoons of water )

1/3 cup of maple syrup

2 tablespoons of melted coconut oil

then mix all the ingredients together and roll  to form shape

cut into cookies and place on cooking sheet at 325 degrees for 27 minutes ( depends on your oven )

they should come out a perfect blend of crunchy and chewy

note: it is always fun to change recipes to ones liking … so maybe use a different flour , or more chocolate / macadamia or bake for longer if a crunchy biscotti is desired 😉
